Welcome to Mays Culinaire. My goal is to share my passion for cooking and food by creating a transformative culinary experience for my guests.  Drawing from 20+ years of knowledge and skills accumulated from working with food and ingredients from all over the world, Mays Culinaire's creative flavorful dishes provide guests with an elevated dining experience by using artisan spices, custom rubs, and an acute balance of acidity that makes good food fun and enjoyable to eat. Food Philosophy and Passion: Chef Mays’s endless study of the fundamental nature of food knowledge, ingredients and how those connect to one’s life and health especially when considered as a discipline, has led him to a simple understanding, “Food Is Love!”. He cooks from his heart and breathes soul into his dishes by staying true to using the best seasonal ingredients and reducing food waste through a “nose to tail” approach. When composing a menu for his guest, Chef Mays carefully chooses his ingredients by the compass of, “if it grows together it goes together”. Drawing from the teachings of his first culinary mentor, his mother, Chef Mays’ goal is to create a memorable and fun dining experience with the intention to foster positive connections with those who are dining.

 

Responsibilities: Personal Chefs are responsible for preparing specialized meals for clients within their own kitchens. Chef Mays plans meals in accordance to the specifications, preferences, and dietary needs of the client. Chef Mays will shop for menu ingredients and execute the menu according to the time, date, and location of the agreement.

 

Experience: Chef Edison Mays has 20+ years of cooking in diverse international culinary locations including Europe, Caribbean, Canada, Vietnam, & the United States (California, Colorado, Florida, New York, Chicago). Chef Mays has hands on leadership and professional experience with demonstrated success directing culinary operations in four and five-star, award-winning, luxury resorts, hotels and high-end restaurants.
